In professional kitchens correct measurements of seasonings is important to the consistency of the food when it is being made daily, and not always by the same person. This is all well and good if you need things to always be the way that the Chef designed the dish.
When I look at a recipe I think about what each seasoning is adding to the whole. If I am not sure what that exact part is adding I taste that part on its own and try to understand how it is interacting with the whole. At home have fun with the amounts of seasoning to add. If you like spicy food add some more spice. Just remember… You can always add more seasoning; You can’t take it out.
